CraneWrecker's Baked CraneRolls

1: Breast out bird
2: Cut shiny skin off
3: Butterfly meat
4: Use tenderizer hammer and pound down to 1/4" thick
5: Rinse off
6: Lay 4 pieces of pepper bacon flat on counter sides touching
7: Lay a piece of crane meat on top of the 4 pieces of bacon towards one end
8: Season with favorite dry rub-generously!
9: Roll up meat with bacon
10: Put in meatloaf/bread pan
11: Sprinkle fresh cracked pepper on top of crane roll
12: Bake at 350* in oven for 30 minutes
13: Take out of oven and let cool for 5 minutes
14: Slice in 1/4" slices
15: Lightly drizzle with soy sauce
